Cactus Luxembourg Deals: 4 Easy Dinners from the Leaflet

The new Cactus leaflet has good staples on offer this week, especially rice, canned fish, and frozen veggies. I picked out four easy dinners you can make without spending much time in the kitchen. Everything is simple and uses everyday stuff.

Chorizo and Pea Rice

From the Cactus leaflet

Agulha Rice Cigala

  • Agulha Rice Cigala, 1 kg: €1.99 (was €2.99, 30% off)

Damatta Chorizo

  • Damatta Chorizo, 225 g: €2.79 (was €3.79, 25% off)
  • Peas, 400 g: €0.95 (was €1.19, 20% off)

Shopping for this dish: €5.73 at Cactus, about 30 minutes in the kitchen, 2 servings.

Chorizo and peas always make rice taste way better, and both are cheap in the leaflet right now. From your pantry, you only need olive oil, an onion, garlic, salt, and water.

  1. Dice one small onion, two cloves of garlic, and slice 100 g of the chorizo.
  2. Heat one tablespoon of olive oil in a saucepan and fry the chorizo until fragrant.
  3. Add the chopped onion and garlic, cooking gently until soft.
  4. Stir in 180 g of the rice and 150 g of the peas, then pour in 400 ml of water with a pinch of salt.
  5. Cover the pan and simmer on low heat for 18 minutes until the liquid is absorbed, then serve hot.

Tuna and Tomato Pasta

From the Cactus leaflet

Egg-Free Pasta Milaneza

  • Egg-Free Pasta Milaneza, 2 x 500 g: €1.45 (was €1.96, 26% off)

Elvea Finely Crushed Tomatoes

  • Tuna in Vegetable Oil Bom Petisco, (20 + 5) x 120 g: €29.90 (was €38.75, 23% off)

Shopping for this dish: €33.90 at Cactus, about 20 minutes in the kitchen, 2 servings.

Tuna pasta is my go-to meal when I want real food on the table in twenty minutes flat. You just pull garlic, olive oil, salt, pepper, and water from your cupboards.

  1. Boil 200 g of the pasta in salted water for 9 minutes until tender, then drain.
  2. Warm one tablespoon of olive oil in a wide pan and sauté two minced garlic cloves.
  3. Pour in 300 g of the crushed tomatoes and season with salt and pepper.
  4. Simmer the sauce for 6 minutes, then fold in two drained cans of the tuna.
  5. Toss the cooked pasta directly into the sauce and mix well before serving.

Ham and Fresh Cheese Pizza

From the Cactus leaflet

Plain fresh cheese with salt Le Marin

  • Plain fresh cheese with salt Le Marin, 125 g: €1.49 (was €2.19, 30% off)

Thin and round pizza dough

  • Thin and round pizza dough, 2 x 265 g: €2.65 (was €3.58, 26% off)
  • Elvea Finely Crushed Tomatoes, 690 g: €2.55 (was €3.49, 25% off)
  • Cooked Ham Fiambre da Perna, kg: €13.55 (was €16.95, 20% off)

Shopping for this dish: €20.24 at Cactus, about 25 minutes in the kitchen, 2 servings.

Ready dough makes pizza night very painless, and the fresh cheese melts into something soft and mild. From the cupboard, grab olive oil, dried herbs, and salt.

  1. Preheat the oven to 220 degrees Celsius.
  2. Unroll one round of the pizza dough onto a baking sheet.
  3. Spread 150 g of the crushed tomatoes over the base, seasoning with salt and dried herbs.
  4. Tear 100 g of the cooked ham into pieces and scatter evenly over the top.
  5. Crumble 125 g of the fresh cheese over the pizza and drizzle with one teaspoon of olive oil.
  6. Bake in the hot oven for 15 minutes until the crust is golden and crisp.

Pan Fried Hake with Broad Beans

From the Cactus leaflet

Chourição Sausage

  • Chourição Sausage, 100 g: €1.39 (was €1.89, 25% off)

Hake Steaks for Boiling or Frying

  • Hake Steaks for Boiling or Frying, 1 kg: €5.49 (was €6.95, 20% off)
  • Broad Beans, 400 g: €2.15 (was €2.69, 20% off)

Shopping for this dish: €9.03 at Cactus, about 25 minutes in the kitchen, 2 servings.

Hake steaks cook quickly in a pan, and frying a little sausage first gives the beans plenty of taste. You only need olive oil, garlic, salt, pepper, and a lemon from home.

  1. Chop 60 g of the chouricao sausage and slice two cloves of garlic.
  2. Heat one tablespoon of olive oil in a skillet and cook the sausage and garlic for 3 minutes.
  3. Toss in 250 g of the broad beans, season with salt and pepper, and cook until tender.
  4. Season 400 g of the hake steaks with salt and pepper on both sides.
  5. Push the vegetables to the edge of the skillet, add the hake, and sear for 4 minutes per side.
  6. Finish with a squeeze of fresh lemon juice over the fish and serve immediately.
