4 Simple Dinners from the Lidl Luxembourg Leaflet

4 Simple Dinners from the Lidl Luxembourg Leaflet

The new Lidl leaflet has cheap salmon, fresh spinach, and good prices on minced meat this week. I picked out a few basic staples to make four quick dinners that do not take forever to cook. You can sort out dinner for several nights without spending too much.

Creamy Salmon and Spinach Noodles

From the Lidl leaflet

  • Skinless Salmon Fillet, 3 x 125 g: €7.99 (was €11.95, 33% off)
  • Fresh Spinach, 450 g: €0.99 (was €1.99, 50% off)
  • Luxlait Fresh Cream 36%, 2 x 500 ml: €5.52 (was €7.36, 25% off)
  • Chef Select Egg Noodles, 2 pcs: €2.99 (was €3.98, 25% off)

Shopping for this dish: €17.49 at Lidl, about 20 minutes in the kitchen, 2 servings.

Salmon fillets and fresh spinach are both cheap right now, so making a quick pasta sauce was an easy choice. From your cupboard, you only need butter, garlic, salt, pepper, and water.

  1. Boil 250 g of egg noodles in salted water for 5 minutes, then drain and set aside.
  2. Melt 15 g of butter in a large skillet over medium heat and sauté 2 diced cloves of garlic for 1 minute.
  3. Add 250 g of diced salmon fillets to the skillet and cook for 4 minutes until lightly browned.
  4. Add 200 g of fresh spinach and stir until completely wilted.
  5. Pour in 150 ml of fresh cream, season with salt and pepper, and simmer gently for 3 minutes.
  6. Stir the cooked egg noodles into the sauce and serve hot.

Bacon and Grenaille Potato Skillet

From the Lidl leaflet

  • Sliced Bacon, 2 x 500 g: €5.15 (was €10.30, 50% off)
  • Grenaille Potatoes, 1 kg: €1.55 (was €2.59, 40% off)
  • Fresh Spinach, 450 g: €0.99 (was €1.99, 50% off)

Shopping for this dish: €7.69 at Lidl, about 30 minutes in the kitchen, 2 servings.

Little grenaille potatoes are on sale and they always taste great fried up with sliced bacon. The only things you need to grab from the pantry are olive oil, onion, salt, and pepper.

  1. Halve 500 g of grenaille potatoes and chop 150 g of sliced bacon into strips.
  2. Heat 15 ml of olive oil in a wide frying pan over medium heat and add 1 chopped onion with the bacon strips.
  3. Fry for 4 minutes until the bacon begins to brown and render its fat.
  4. Add the halved potatoes, season with salt and pepper, cover with a lid, and cook for 18 minutes while stirring occasionally.
  5. Toss in 150 g of fresh spinach and cook uncovered for 2 minutes until the leaves collapse into the warm potatoes.

Creamy Meatballs with Mashed Potatoes

From the Lidl leaflet

  • Minced Beef and Pork XXL, 800 g: €4.59 (was €9.26, 50% off)
  • Harvest Basket Mashed Potatoes, 2 x 500 g: €3.23 (was €4.30, 50% off)
  • Luxlait Fresh Cream 36%, 2 x 500 ml: €5.52 (was €7.36, 25% off)

Shopping for this dish: €13.34 at Lidl, about 25 minutes in the kitchen, 2 servings.

The big pack of minced beef and pork makes plenty of meatballs, and pairing them with quick mashed potatoes feels like proper comfort food. For the pantry side, you just need an onion, oil, butter, salt, pepper, and water.

  1. Combine 400 g of minced beef and pork with half a finely diced onion, salt, and pepper in a bowl.
  2. Roll the seasoned meat into eight equal meatballs.
  3. Heat 15 ml of oil in a frying pan over medium heat and cook the meatballs for 10 minutes until browned on all sides.
  4. Prepare 500 g of mashed potatoes in a small pot with 20 g of butter and salt according to package instructions.
  5. Pour 150 ml of fresh cream and 50 ml of water into the meatball pan to create a rich sauce, simmering for 3 minutes.
  6. Spoon the hot meatballs and pan sauce over mounds of warm mashed potatoes.

Minced Meat Pumpkin Skillet with Bread

From the Lidl leaflet

  • Minced Beef and Pork XXL, 800 g: €4.59 (was €9.26, 50% off)
  • Hokkaido Pumpkin, kg: €0.85 (was €1.29, 34% off)
  • Turkish Bread, 2 x 200 g: €0.99 (was €1.98, 50% off)

Shopping for this dish: €6.43 at Lidl, about 30 minutes in the kitchen, 2 servings.

Hokkaido pumpkins are finally showing up in the aisles for cheap, which means autumn cooking is actually here. Check your cupboards for olive oil, onion, garlic, salt, pepper, dried herbs, and water.

  1. Chop 1 onion and 2 cloves of garlic, then cut 400 g of Hokkaido pumpkin into small bite size cubes.
  2. Heat 15 ml of olive oil in a deep skillet over medium heat and cook the remaining 400 g of minced beef and pork for 6 minutes until browned.
  3. Add the chopped onion, garlic, pumpkin cubes, salt, pepper, and 2 g of dried herbs to the pan.
  4. Pour in 100 ml of water, cover with a lid, and simmer for 15 minutes until the pumpkin becomes fork tender.
  5. Warm 200 g of Turkish bread in a dry pan and serve alongside the skillet.
