Cactus has plenty of Italian pantry staples on discount this week, including pasta, rice, and scamorza. I picked four simple dinners you can cook without spending hours in the kitchen. Everything is quick to make and keeps meal planning easy.

Smoked scamorza is on sale, so making a crispy pinsa at home is an obvious pick. From your cupboard, you only need olive oil, dried herbs, and salt.
- Preheat the oven to 220 degrees.
- Place both pieces of the 230 g Harrys pinsa onto a baking tray.
- Spread 150 g of the Elvea pizza sauce evenly over each pinsa base.
- Slice 200 g of the Zanetti smoked scamorza thinly, then distribute it across the sauce.
- Drizzle with 15 ml of olive oil, then season with a pinch of salt and dried herbs.
- Bake in the oven for 10 to 12 minutes until the cheese is melted and bubbling.

Tuna pasta gets boring fast, but melting in some mascarpone makes it super creamy and rich. Grab olive oil, garlic, salt, and pepper from the cupboard.
- Bring a large pot of salted water to a boil, then cook 200 g of the Barilla pasta for 10 minutes.
- Heat 15 ml of olive oil in a wide pan over medium heat, then mince and cook two cloves of garlic for one minute.
- Pour in 300 g of the Elvea passata, then simmer gently for 5 minutes.
- Drain 224 g of the Rio Mare natural tuna and flake it into the tomato sauce.
- Stir in 100 g of the Galbani mascarpone until completely smooth and heated through.
- Drain the cooked pasta, toss it thoroughly into the sauce, and season with salt and pepper.
Tortelloni with Basil Tomato and Burrata
From the Cactus leaflet

- Elvea Basil Passata, 3 x 500 g: €3.95 (was €5.97, 34% off)

- Rana Fresh Tortelloni, Cappelletti or Ravioli, 250 g: €2.89 (was €3.89, 25% off)
- Galbani Mini Burrata, 6 x 30 g: €2.89 (was €3.89, 25% off)
Shopping for this dish: €9.73 at Cactus, about 20 minutes in the kitchen, 2 servings.
Fresh tortelloni is cheap right now and boils in four minutes, which is ideal when you feel lazy. You just need olive oil, salt, and pepper from your pantry.
- Heat 15 ml of olive oil in a skillet over medium heat, then pour in 300 g of the Elvea basil passata.
- Simmer the tomato sauce gently for 6 minutes, then season lightly with salt and pepper.
- Cook 250 g of the Rana fresh tortelloni in a pot of boiling salted water for 4 minutes, then drain carefully.
- Transfer the cooked tortelloni into the skillet with the tomato sauce and stir gently to coat.
- Divide the pasta between two serving bowls and top each portion with three pieces of the Galbani mini burrata.
- Drizzle with a little olive oil and serve warm.

Risotto sounds complicated, but this one uses arborio rice and tomato paste from the leaflet for an easy dinner. You will need onion, butter, a stock cube, water, salt, and pepper from the pantry.
- Dissolve one stock cube in 800 ml of hot water in a small pot and keep warm.
- Melt 20 g of butter in a saucepan over medium heat, then saute one finely chopped onion for 3 minutes.
- Add 200 g of the Scotti arborio rice, stirring for 2 minutes until glossy.
- Stir in 50 g of the Elvea double tomato paste, then add hot stock one ladle at a time until absorbed, cooking for 18 minutes.
- Dice 80 g of the Zanetti smoked scamorza into small cubes.
- Remove the pan from heat, then stir in the diced scamorza and 30 g of grated Grana Padano Zanetti until melted and creamy.
- Season with salt and pepper, then serve immediately.
