The new Cactus leaflet has good prices on everyday staples like minced meat, rice and canned corn this week. I picked out a few items to make three quick dinners that do not cost a lot. Everything comes together in under half an hour.
Cheesy Minced Meat Pasta Skillet

Minced veal and pork is on offer right now, which makes a warm skillet meal the obvious choice on a chilly evening. From your cupboard, you only need olive oil, an onion, garlic, dried herbs, salt, pepper and water.
- Boil 250 g pasta in salted water for 10 minutes until tender, then drain.
- Heat one tablespoon olive oil in a large skillet, adding one chopped onion and two minced garlic cloves until soft.
- Add 350 g minced veal and pork, cooking for 6 minutes while breaking it up thoroughly.
- Stir in 140 g tomato purée, 100 ml water, dried herbs, salt, and pepper, then simmer for 5 minutes.
- Fold the cooked pasta into the sauce, scatter 100 g grated Emmental over the top, and cover with a lid until melted.
Sweet Corn and Surimi Fried Rice

Coraya surimi and basmati rice are both discounted, so this is a great week to make a quick pan of fried rice. You just need to grab cooking oil, an onion, garlic, soy sauce, salt, pepper and water from the pantry.
- Cook 200 g basmati rice in 350 ml salted water for 12 minutes, then fluff with a fork.
- Slice 150 g surimi sticks into small rounds, and drain 150 g sweet corn.
- Heat two tablespoons oil in a frying pan, then cook one chopped onion and two minced garlic cloves for 3 minutes.
- Add the surimi rounds and sweet corn to the pan, cooking for another 3 minutes.
- Add the cooked rice, drizzle two tablespoons soy sauce, season with pepper, and stir fry everything for 3 minutes.
Warm Bean Corn and Cheese Toasts

Harrys bread and canned white beans make a super cheap comfort meal when you do not feel like standing over the stove for long. All you need from home is a bit of butter, dried herbs and black pepper.
- Empty 340 g white beans in tomato sauce and 100 g drained sweet corn into a pot, adding pepper and dried herbs.
- Simmer the beans and corn gently for 6 minutes, stirring occasionally until hot.
- Toast four thick slices of Harrys bread lightly in a toaster or dry pan.
- Butter the warm toast slices, arrange them on a baking sheet, and spoon the warm bean mixture over top.
- Scatter 100 g grated Emmental over each portion, then grill in the oven for 4 minutes until bubbling and golden.
